Cooking Notes
Make your special occasion lovelier with a healthier twist on one of the most popular Indian desserts, halwa.
In this wholesome take on a traditional sweet, the sweetness comes from the apples, but you’re welcome to add some raisins or nuts for a bigger bite!
Makes 4–6 servings.
Method
- Dry-roast the semolina for 2 minutes, taking care that it doesn’t turn brown.
- Heat the milk and water together in a deep pan. When it comes to a boil, add the sugar, cardamoms, and saffron, and mix.
- Slowly, add the semolina, while stirring, till the mix becomes semi-dry. Add the pureed apples. Stir well and cook for just under two minutes, as it thickens quite fast.
- It’s ready! Scoop into bowls and serve warm, decorated with saffron threads or sliced apples.
